Eggplant bacon. I’m sorry, what?!

Ahhhh bacon. Beautiful bacon. Obviously it tastes good on literally everything. You can add it to your sandwich, your salad, omelet- it even pairs with chocolate. But is there ever a comparable substitute ? NO! I’m not gonna lie to you. BUT, I found a yummy alternative, one thats healthier. The eggplant just became more to me than a dirty emoji. Eggplant bacon, yep you heard that right. At first I was pretty skeptical, but it’s honestly really tasty. Give it a go.

I like simple so, here’s the recipe I used:

1 medium eggplant

1 tablespoon soy sauce 1 teaspoon smoked paprika 1/2 teaspoon liquid smoke 1/4 cup olive oil

Peel the skin. Slice the ends of the eggplant off, and then with a veggie peeler, slice long thin strips.

Combine the soy sauce and liquid smoke with paprika and whisk all together. Then brush with seasoning only ONE side of the eggplant strips. (this helps keep the eggplant from weeping)

Heat the olive oil on the skillet over medium heat for about 5 minutes. Then add the strips seasoned side up for two minutes, then flip and do the other side for two minutes.

Lay them on a plate with a paper towel, to soak up the excess oil.
